This is one of the top selection of our factory and it’s made from the pressing of only one kind of olive: the “Peranzana of Puglia”. A monovarietal (monocultivar) is, normally, a great personality oil, really typical and representative of its production area and, for these reasons, it’s particularly esteemed.
The olive are picked by hand at the perfect degree of maturity and immediately pressed for keep their high quality.
It have an intense emerald green color and is limpid for the clarification by the passage through paper sheets.
The main feature of the Monocultivar Peranzana is the fruity perfume, with flower and vegetal overtones.
In mouth is soft and really balanced, a little spicy and bitter, with a lot of flavourings of tomatoe, green apple and banana, artichoke and fresh grass.
Its sophisticate taste made it ideal for grilled fish, “risotto” and fresh cheese.
The main quality of the Monocultivar Peranzana is to be an oil enjoyable fresh, i.e just after the pressing. For this reason this oil is considered one of the 10 best cultivar in the world, and it’s perfect as a monocultivar, but also really good for make a blend.
